Ingredients
  

  • Peanut butter (or any nut/seed butter)
  • Rolled oats (quick oats also work)
  • Honey or maple syrup
  • Semi-sweet chocolate chips (or dark chocolate)
  • Coconut oil or butter
  • Cream cheese (block, not whipped)
  • Greek yogurt (plain or vanilla)
  • Powdered sugar
  • Vanilla extract
  • Oreos or chocolate wafer cookies
  • Graham crackers
  • Bananas (ripe)
  • Strawberries (or any berries)
  • Sea salt (flaky, if you have it)
  • Optional add-ins: shredded coconut, chopped nuts, mini marshmallows, cinnamon, lemon zest

Method
 

  1. Make the base: In a bowl, mix 1 cup peanut butter, 1/3 cup honey, and 2 cups oats until sticky and combined. If it’s too dry, add 1–2 tablespoons more honey.
  2. Press and chill: Line an 8x8-inch pan with parchment. Press mixture into an even layer.
  3. Top with chocolate: Melt 1 cup chocolate chips with 2 tablespoons coconut oil in the microwave (20-second bursts, stirring). Spread over the oat layer.
  4. Finish: Sprinkle with a pinch of sea salt. Chill 1–2 hours until firm. Slice into bars.
  5. Crust: Crush 10–12 Oreos (or chocolate wafers). Stir in 2 tablespoons melted butter. Press into the bottoms of 6–8 small cups or jars.
  6. Filling: Beat 8 ounces cream cheese (softened) with 1/2 cup Greek yogurt, 1/2 cup powdered sugar, and 1 teaspoon vanilla until smooth.
  7. Assemble: Spoon filling over the crust. Top with crushed Oreo crumbs.
  8. Chill: Refrigerate 1–2 hours to set. Serve cold.
  9. Base: Crush 8–10 graham crackers. Set aside.
  10. Creamy layer: In a bowl, mix 1 cup Greek yogurt with 2–3 tablespoons honey and 1 teaspoon vanilla. For extra richness, fold in 4 ounces softened cream cheese.
  11. Layer: In jars or glasses, add a layer of graham crumbs, sliced bananas, then the creamy mixture. Repeat once.
  12. Top: Add more crumbs and a few banana slices. Chill 30–60 minutes before serving.
  13. Melt: Melt 1 cup chocolate chips with 1 tablespoon coconut oil until smooth.
  14. Mix: Stir in 1 1/2 cups chopped strawberries (patted very dry) and 1/2 cup shredded coconut or chopped nuts (optional).
  15. Form: Drop spoonfuls onto a parchment-lined tray. Sprinkle with flaky salt.
  16. Set: Chill 20–30 minutes until firm. Store in the fridge.
